My first day as a blogger


This is so exciting! I finally figured out how to make a blog. This has taken me months, but it was well worth it. Me and computers have never understood each other, so this blog may look pretty ugly until I figure things out : )

But I'll start off by saying that this is going to be a cooking blog with a little bit of my life thrown into it. Weird stuff happens to me everyday, so writing about it might make you laugh, too. So here we go.

Today, I started off with Vegan Apple-Hemp Muffins with Golden Raisins and Almonds. They are from Dreena Burton's cookbook "Vive le Vegan," but I altered the recipe with the add-ins. I baked half of them in my new ice cream cone muffin tin and the rest in a crappy old muffin tin. Both of them tasted great, even though the ice cream cone ones were massive and way cooler looking. My sister's cat, Butter, tried to help bake, but she ended up just getting in the way of everything. haha she tends to do that.

Here's the recipe:
Vegan Apple-Hemp Muffins
with Golden Raisins and Almonds


1 1/2 cups whole-wheat flour
1 cup ground oats
1/2 cup hemp seed nuts
2 tsp baking powder
1 tsp baking soda
1/4 sea salt
1/2 cinnamon
1/4 nutmeg
1 cup unsweetened applesauce
1/2 maple syrup
3/4 milk (I used almond milk)
1 tsp vanilla extract
3 tbsp canola oil
1/3 cup golden raisins
1/3 cup blanched almonds
Directions:

Preheat oven to 350 degrees F. In large bowl, combine the dry ingredients, sifting in the baking powder and baking soda. Stir through until well combined. In a separate bowl, combine applesauce, maple syrup, milk, vanilla, and canola oil, and mix together. Add the wet mixture to the dry mixture, and mix together. Add the raisins and almonds and continue to mix together until none of the dry ingredients are left over. Spoon the mixture into muffin tins with cupcake liners or spray the tins with PAM. Bake for 25 minutes, or until a toothpick inserted comes out clean.

These muffins popped out of the muffin tins without a problem. I didn't even have to bang the tin against the counter. This is my little sister, Apples. Well, she's 17, so she's not that little, but anyway, she loved the muffins!!! Vegan isn't usually her thing either, so you should definitely try these puppies out.

Congratulations on starting your own blog! I just started my own a couple of months ago.

I'm eighteen years old, too, but unfortunately, I can't cook at all. If you have the time, let me know next time you update. Maybe I'll try some recipes. ^^ Or... have a friend try them.

It's nice to know there's other people my age on here. It seems like everyone is a mother, not that it's a bad thing! haha
